In recent years we've been conditioned to respond with much excitement when our friends at Legado release a new Yirgacheffe. This excitement is heightened when it's a natural-processed coffee from the Ethiopian region that many see as the Champagne of coffee. They've developed a knack for finding some exceptional examples of this combination of processing method and origin, and always roast them to perfection.
If you haven't tried one of Legado's naturally processed Yirgacheffe finds, then this release grown by farmers in the area surrounding Rocko Mountain would be a delicious place to start. From the cupping bowl to the pour-over dripper, we've been wowed by the flavour of this coffee.
The dominant notes in this coffee are ripe juicy berries - strawberries specifically. You'd be forgiven for momentarily thinking you're drinking strawberry juice when you get the brewing just right. There are also some other subtle notes that only add to the experience. We found hints of blueberries, green apples and citrus in certain cups.
This coffee seems to like shorter filter extractions, so we'd encourage you try use your Aeropress and V60 pour-over dripper to experience it at its very best.
